Smashburger
My boss gave me a jar of bourbon bacon jam and I had a pound of ground cow heart in my freezer. The decision to make a smashburger was kind of made for me.
It came together quickly. I mixed some diced serrano pepper into the jam for a kick, grabbed a slice of cheddar and put a dollop of kewpie mayo on a sesame seed bun.
I use parchment paper between a heavy spatula and the burger. Not only does it prevent sticking, but it also helps keeps the grease mess down. I used a stainless steel pan. If you clean those while still hot, the burned bits come right off.
It wasn’t nearly as unhealthy as it might have been. I used a quarter pound of beef heart and no extra oil. There was a slice of cheddar, maybe a tablespoon of mayo and the jam/pepper.
Served it with some sweet potato fries baked from frozen. I’ve made my own before, but it’s a place that needs improvement.

Smashburger
Ingredients
4 oz. ground beef heart
Sesame seed hamburger bun
Dollop bourbon bacon jam
Dollop of mayonnaise
Minced serrano pepper
Slice of cheddar cheese
Prep time: 10 minutes
Cook time: 5 minutes
Total time: 15 minutes
Directions
Form burger into a ball.
Heat stainless steel pan until very hot.
Mix jam and pepper. Put mayo onto slat side of bun top.
Put burger into stainless steel pan.
Lay sheet of parchment paper on ball. Press down on burger with something heavy and flat.
Cook for a few minutes, until bottom is seared almost black. Flip and repeat.
Lay slice of cheese on top of burger while it cooks.
Burger on bun, jam on burger, bun on top.
